Progress made. If you want an R2 domain controller but your DCs are all 32 bit, you can't promote the R2 box until you adprep the domain which you can't do as you don't have the 32 bit R2 version of adprep.
But there's a hotfix available for free if you quote KB919151.
Hotfix arrived by email in less time than it takes to type this sentence. Installed, configured, thank you kindly to the nice lady at the end of the phone.
My new DC went live today and I remembered how to transfer all the FSMO roles over to the new domain controller. Well, maybe a teensy bit of help from Google.
